What Makes a Perfume Beautiful?

“What makes a perfume beautiful?” I pose a question to Maurice Roucel knowing fully well that it is a complicated question to answer. Roucel is a perfumer with more than 40 years of experience in creating exquisite perfumes, such as Hermès 24 Faubourg, Donna Karan Be Delicious, Frédéric Malle Dans Tes Bras, and Serge Lutens Iris Silver Mist, and he’s devoted much effort to promoting the notion of perfumer as an artist, rather than a mere “nose.” “We use our imagination and our brains more than noses,” he says.

Perfumery as an intangible art can be hard to champion. Although scents are related to the intangible cultural heritage protected by UNESCO such as cuisine and certain arts, they don’t benefit from the recognition or documentation. (The Osmothèque, a scent archive based in Versailles, is the main institution studying and preserving the historical fragrances today.) Perfume is generally seen as too subjective to define or even describe, which makes definitions of artistic worth complicated.

Rosewater in Food and Fragrance

The 10th century Persian philosopher and scientist Avicenna is credited with many contributions to astronomy, geography, psychology, logic, mathematics, and physics. He also found time to delve into perfumery and devised methods to extract essential oils, experimenting on roses. If Avicenna were to step into a fragrance lab today, he would orient himself quickly enough–modern perfumery is a curious amalgam of state-of-the-art science and traditional techniques. For instance, rose oil is prepared in much the way as in Avicenna’s time through the process of steam distillation.

Even older than rose oil is rosewater, an ingredient with a history predating Avicenna. Lebanese food writer Barbara Abdeni Massaad, whose award winning cookbook Mouneh explores the traditions of preserving fruit, vegetables and flowers, includes a section on making rosewater. “Yes, the distillates from roses and orange flowers continue to be made in villages,” she commented on the vitality of the tradition. “Older people still believe that homemade is best.”

Fragrance for a Gold Autumn

One of the most interesting principles in Japanese garden design is the idea of borrowed scenery, shakkei. Using existing landscape elements—distant mountains, ponds, and neighboring structures, a creator would plan the garden in such a way as to incorporate the surroundings into her composition and create her personal vision of nature. Perfumery is generally more about artifice and fantasy, but as summer fades, I too become inspired to borrow autumnal scenery for my fragrant accompaniment. My perfume choices become led by the scents of fall.

Even in the deodorized urban environment, autumn is a fragrant season. The moment that leaves start to fall, the air is filled with a mellow sweetness reminiscent of walnut shelves and faded leather. On my way to the metro, I take a roundabout way through a park, kicking the golden leaves and glossy chestnuts with the tip of my boots. On my scarf I carry Serge Lutens’s Chypre Rouge, a perfume that smells of maple syrup and bittersweet moss. Or I might select the delicate Bulgari Eau Parfumée Au Thé Rouge, an infusion of tea, ripe figs and maple leaves.

In the Defense of Perfume and Other “Feminine” Pursuits

I often receive letters from women explaining that they feel guilty about their interest in perfume, because it’s “too indulgent” or “unnecessary.” It’s a luxury and we can live without it. Or so the argument goes. Except that it doesn’t make sense. Perfume is not a fundamental need for human life, but you could say the same for music, art, fashion, sports, restaurants or millions of other things that are not strictly necessary for survival but essential for a happy life. There is no reason to deprive yourself of something that gives you pleasure, and giving in to it shouldn’t be associated with guilt.

Scent is one of the simplest and most rewarding of enjoyments. By stimulating the sense of smell, you fantasize about another time and place, uncover a whole universe of new sensations and add splashes of color to the most ordinary day. Something as ubiquitous as a trip to the grocery store can become a fun experience as you smell the earthy tang of carrots or the pungent sharpness of onions piled in the vegetable section.  New research has revealed that the sense of smell is even more intricate than previously thought, and that smelling is one of the best exercises for the brain.

Pink Berries or Pink Peppercorns in Perfumes

If you’ve ever wondered what “solar musk,” “lunar petals” or “electric vanilla” smell like, you aren’t alone. Fragrance marketing lingo is in a world of its own, and I have given up trying to find the logic behind the use of terms that nobody, not even professionals, can untangle. A list of notes describes a perfume’s smell as well as an enumeration of pigments captures Mona Lisa’s smile. While notes can suggest whether a fragrance is predominantly floral, leathery or spicy, they can also be misleading.

One example is “pink berries.” The name hints at the scent of strawberries or raspberries, but instead, “pink berries” is a literal translation of baies roses, French for “pink pepper.” The rose colored berry of the shrub Schinus molle is unrelated to the black pepper plant, but it has a spicy, sharp scent reminiscent of crushed peppercorns with a touch of violet. Its presence in perfumes is confined to the top notes where it reveals its fiery temperament, but pink pepper’s piquancy is without bite. It softens readily, allowing the subsequent layers to shine, be they flowers or woods.
